Jack fruit is one of the seasonal products in Kerala and it is available in different varieties. Idichakka or Idinchakka / Tender Jack fruit thoran is one such popular dish in Kerala, which tender jackfruit is cooked, then shredded and stir fried with coconut, some spices and served along with steamed rice.
Tender jackfruit curry or idichakka thoran is a kerala dish that we commonly found in a sadhya. It is made with tender jackfruit and coconut. It's so easy to make this dish but you have to chose unripe, young jackfruit to prepare and have to remove its peel. Idichakka thoran is well suited for rice or rice gruel (kanhi). Actually I learned this recipe from my grand mom in law. These are traditional recipes that are behind our experiments. The traditional recipes should be prepared in the way that our grandmothers did.You all must try this recipe and let me know your response.
Dice jack fruit into small pieces.
Cook it in a pressure cooker by adding turmeric powder, salt and water. Adjust the amount of water and salt.
Crush it with a spoon.
Heat a curry pan and pour little coconut oil.
Put mustard seeds and let it sputter.
Add garlic and sauté for a while.
Put curry leaves and red chillies. Sauté it for 2 or 3 seconds.
Add grated coconut into it and stir.
Put the crushed jack fruit and mix them.
Let the fire in medium temperature and cook it for a minute.
