Malayalees love for puttu (steamed rice cake) is well known. This is one of the most preferred breakfast in Kerala though this is common item in any Kerala household. Puttu is a south Indian breakfast dish served with sugar and bananas or with chickpea. As I mentioned my earlier posts, Puttu is a kind of staple breakfast of Keralites. A dish of steamed cylinders of ground rice layered with coconut. There are so many varieties of puttu like erachi puttu, gothambu puttu masala puttu ,this is 1 among them vegetable puttu. The best part of this dish is you don’t need to prepare a separate curry for this. This itself has got curry in it.
Along with the traditional style puttu I also prepared steamed vegetable based one. In addition to grated coconut, a layer of steamed vegetable is added to the mould before adding the puttu mix into the mould before being steamed.
soak needed amount of sorted rice in a bowl.
Clean the rice and filter the water from the rice.
Grind it in a mixer jar or a grinder.
Add salt and water and mix it.
Add carrot and beans to the rice flour and mix it.
Warm half of the vessel of the puttu maker with water in a gas stove.
Arrange the puttu maker with a layer of grated coconut first then one scoop of rice flour and again the grated coconut manner.
Place the puttu maker over the vessel and steam it for 2-3 minutes.
When steam comes out from the puttu maker, puttu is ready.
Serve hot in a plate.
You can have puttu with kadala or chick peas curry, fish curry or chicken curry.
